This sake is made using Yamada Nishiki rice from the Special A district of Hyogo Prefecture, aged for about two years at sub-zero temperatures. It is a blend of Junmai Daiginjo sake with a 20% polishing ratio and Junmai Daiginjo sake with a 35% polishing ratio, mixed in a 1:1 ratio just before shipping.
